Piri-piri chicken

Piri-piri chicken is a spicy dish with roots in both Africa and Portugal. The dish was created in Angola and Mozambique when Portuguese settlers arrived with chili peppers (known as piri-piri in Swahili). The chicken needs to marinate for at least two hours before being grilled.The chicken barbecue to the Portuguese fashion is a treat enjoyed by almost everyone. And incredible as it sounds the Portuguese Chicken recipe on the barbecue has crossed borders and is gaining more and more supporters in the countries where it is inserted. Both Luisa and I adore the taste of this chicken, it is a fantastic dish to prepare in the summer when friends come over and we can all be outside in the garden, enjoying the good weather and a good glass of chilled Portuguese white wine ( Alvarinho ) whilst the chicken is being prepared.  Ingredientes:

  • 1 medium size chicken open in half
  • 1/4 cup chopped fresh cilantro
  • 1 rosemary stem
  • 1 piece fresh ginger, peeled, thinly sliced
  • 1 large shallot, peeled, quartered
  • 3 chili pepers
  • 3 garlic cloves, peeled
  • 1tea spoon piri-piri sauce (add more if you like it hot)
  • 1cup extra-virgin olive oil plus additional for brushing
  • 1/4 cup fresh lemon juice
  • A dash of Vinegar
  • 1 tablepoon coarse salt
  • 1 teaspoon freshly ground black pepper

Preparation:

In a mortar, place the garlic cloves together with the chili peppers, the salt and the piri-piri sauce. Add a dash of vinegar, of olive oil and mix.Introduce a rosemary stem under the skin of chicken. Place the  chickens in a plastic bowl add the choped shallot and massaje same well with the marinade. Leave to rest in a cool place for 2 hours. Remove the chickens and reserve the marinade Prepare the barbecue. Light the fcoals and place grill, which should be more or less at a distance of 4 fingers from the coals , Grill the chicken until it is a nice and golden color, make sure its well done. Brush with the marinade once in a while so the meat does not dry out. Turn the chicken through the grilling process so that it cooks evenly. Accompany with cherry tomato and lettuce salad .
